This Raspberry Peach Cobbler is the perfect way to use those fresh peaches and raspberries that are abundant in late summer and early fall. The sweet, ripe fruit paired with light, fluffy cake is one of those flavor combinations that can’t be beat! It reminds me of summer picnics, lake trips, and family reunions. Ingredients

  • Peaches – fresh, peeled
  • Raspberries
  • Jell-O mix – peach or raspberry
  • Butter – melted
  • Water

Fresh or Frozen Fruit?

I always opt for fresh peaches and raspberries if they’re in season and available in my area. Many times, friends and neighbors have more fruit than they can use, and I count myself a lucky beneficiary of that goodness. However, if you aren’t able to get your hands on fresh fruit, frozen peaches and raspberries are the next best thing. Canned peaches will also work in a pinch. You really can make this dessert all year long. It just reminds me so much of summertime, that’s usually when I remember to make this dessert. You don’t even need to thaw the fruit; just toss it in as directed in the recipe card below.

How do you Blanch Peaches?

When using fresh peaches, make sure to blanch them and peel them before slicing them into the cobbler. Blanching peaches makes them easy to peel, and if you are working with peaches that aren’t quite ripe, blanching will improve the flavor. To blanch peaches, place peaches in a large pot of boiling water. If the peaches are ripe, only leave them in the boiling water for about 40-45 seconds. If the peaches are not quite ripe, leave them in the boiling water for one minute. Any longer than the recommended time in the boiling water, and the peaches will start to cook. In this recipe, that doesn’t do much harm since the peaches are going to be cooked anyway, but they will start to soften up enough that they become more difficult to peel.

Cobblers contain a lot of moisture, so if you cook it the night before, it can go quite soggy. If you want to make things a little faster for yourself, you can prep your peach raspberry cobbler by getting the fruit ready ahead of time. But it’s a quick make, there isn’t too much to prep for this summer fruit cobbler.

Ingredients

  • 8 fresh peaches (peeled) enough to fill a 9×13 pan about half way
  • 1 1/2 cups raspberries
  • 3 oz peach Jell-O mix or raspberry
  • 1 white cake mix
  • 1/4 cup butter melted
  • 1/4 cup water

Instructions

  • Preheat oven to 350 degrees.
  • Layer peaches on the bottom of a 9×13 baking dish.
  • Place raspberries evenly on top of peaches.
  • Sprinkle Jell-O mix over peaches and raspberries.
  • Carefully sprinkle cake mix over the Jell-O layer.
  • Drizzle butter and water over the cake mix.
  • Place in oven and bake for 45 minutes, or until cake layer is lightly browned.
  • This is delicious served warm with ice cream. It is also good served cold with a dollop of whipped cream.

Notes

Fresh peaches and raspberries taste best, but when they are not in season you can also use frozen or canned peaches and frozen raspberries. The cobbler will still be delicious!
Make your own whipped cream to go on top! Mix 1 cup of cold heavy cream with about 2 tablespoons of powdered sugar and a teaspoon of vanilla extract.

  1. I didn’t care for this. I only used a sprinkle of raspberries. They still overwhelmed the peach flavor, even with peach jello.

  3. I might have done something wrong, but my cake mix stayed dry on the top. At the end of 45 min I had to mix it into the saucy goodness below and rebake it for another 10 min. What did I do wrong?

    1. It could have been the butter needed to be spread more evenly? I’m not sure why it would have been so dry. You can also add more butter if you feel like it’s not enough to spread over the cake mix. Hope this helps!
