You can literally whip this Roasted Red Pepper Bruschetta up in a matter of minutes with only a few easy ingredients. My kids love to help prepare bruschetta because they can “paint” the olive oil on each of the slices, and then they can carefully top each one with the ingredients. We served this with our easy lemon spaghetti the other day, and the entire meal was ready in less than 20 minutes, start-to-finish.

  • French style baguette
  • Olive oil
  • Mozzarella – sliced
  • Roasted red peppers – sliced, from a jar
  • Parsley – for garnish

Can I Add Other Toppings?

If you are looking for something more, try adding a little avocado to each slice. We also like to drizzle a little balsamic vinegar over the top sometimes, too. Really, you can make it however you would like!

Frequently Asked Questions

What other toppings can I add to bruschetta?

The toppings are endless, the some ideas are: roasted garlic cloves, roasted tomatoes, a smear of goat cheese, various herbs and spices (like oregano, rosemary, fresh basil leaves, flat leaf parsley, Kosher salt, fresh ground pepper), roasted onion, a squeeze of lemon juice, capers, olives, curls of parmesan cheese, and chopped and fried shallot. Any of these can be combined in any sort of way to make your own easy bruschetta recipe, and they would also all be delicious with bell peppers as well.

What to serve with roasted pepper bruschetta?

This Italian appetizer can be eaten on its own, or with a meal. As a snack, an appetizer, or an accompaniment to a meal. It would be really tasty with a simple pasta, a soup, or a vegetable salad. Enjoy!
