My Favorite Breakfast Sandwich

This Ham Egg and Cheese Croissant is one of my family’s all-time favorite breakfasts. It’s hearty, filling, and incredibly easy to whip up. Delicious ham, perfectly cooked eggs, and melty cheese stack beautifully on soft, buttery croissants for the ultimate breakfast on-the-go or a quick lunch option. Skip the fast-food drive-thru and make these tasty sandwiches at home instead—they’re tastier and much more budget-friendly. Whether you’re serving them for breakfast or making them ahead for lunch, they’re delicious any time of the day!

Ingredients in this Ham Egg and Cheese Croissant

  • Croissants – Bigger is better here! I usually pick up butter croissants from Costco because they’re fresh, soft, and generously sized compared to other stores. Always make sure your croissants are soft and fresh, not dry or stale.
  • Eggs – I use large eggs and cook them over easy, medium, or hard, depending on what everyone likes. You could also scramble or bake them if you prefer!
  • Cheddar Cheese – Use pre-sliced cheddar or slice your own from a block. Thinner slices melt beautifully over the eggs and ham.
  • Ham – Deli-style sliced ham is perfect, and you can choose your favorite brand or flavor. Leftover dinner ham also works wonderfully!
  • Mayonnaise – A thin spread of mayo on the croissants keeps everything in place and adds moisture. Mustard, hot sauce, or even grape jelly can also add a delicious twist.

How to Make a Ham Egg and Cheese Croissant

  1. Cook your eggs over-easy (pop the yolks if you prefer them firm).
  2. Place a slice of cheese directly onto the eggs so it melts nicely.
  3. In the same skillet, quickly heat the ham slices until hot, then layer them over the cheese.
  4. Slice croissants in half and spread a little mayonnaise on each side. Layer the hot egg, ham, and cheese mixture onto the croissant bottoms. Season with salt and pepper, and add the tops.
  5. Serve immediately for the best taste!

Tasty Substitutions and Add-ins

Customize your ham egg and cheese croissant sandwich exactly how you like! Here are some delicious options to mix things up:

  • Sausage Patties – Have sausage on hand? Toss a patty into your sandwich for extra savory goodness!
  • Cheese Variations – Cheddar is fantastic, but Swiss, pepper jack, muenster, or mozzarella are great alternatives.
  • Veggies – Add diced bell peppers, onions, spinach, or fresh chives for extra flavor and nutrition.
  • Bacon – Because everything tastes better with bacon, right? Layer crispy bacon onto your sandwich for an extra delicious bite.

Helpful Breakfast Sandwich Tips

Follow these handy tips to make your ham egg and cheese croissant sandwich absolutely perfect:

  • Egg Cooking – Use a rubber spatula to flip eggs gently without breaking the yolks.
  • Stovetop Cooking – Keep the skillet on medium-low heat to cook eggs evenly without browning.
  • Make-Ahead Option – These sandwiches are perfect for prepping ahead. Wrap them tightly in plastic wrap and aluminum foil, then send them off in lunchboxes for a satisfying midday meal.
  • Storing – These sandwiches will stay fresh for up to 2-3 days in the refrigerator when stored in an airtight container.
  • Freezing Tips – These sandwiches freeze beautifully wrapped in plastic wrap and foil, lasting up to two months. Simply reheat in the microwave and enjoy a delicious meal anytime.

Notes

  • Make these sandwiches ahead of time, wrap tightly with aluminum foil, and send them with your kids in their lunchboxes to school. Best lunch sandwich ever!
  • It is easier to use a rubber spatula to flip the eggs in a large skillet. This gives a little bit of bounce and movement without having to break the yolk when flipping.
  • Spreading a thin layer of mayo on the croissant helps keep all the ingredients in place and adds a little moisture to the sandwich. Feel free to try out other sauces too, like mustard, hot sauce, or even grape jelly for a sweet/savory flavor.
