I love these tacos! They are so tasty and filling. The mix of crispy sweet potatoes and savory black beans make the perfect bite. On top of that, you add the avocados, cilantro, and cotija cheese, and I end up stuffing my taco so full I can barely lift it up.

These tacos have a little heat from the green chiles, but you can bump up the heat a little by adding more green chiles or other spicier peppers. Make these tacos just the way you love them. It is easy to make and comes together quickly!

Sweet Potato Tacos Ingredients

Roasted sweet potatoes are the highlight of these tacos! Layer the sweet potatoes, black beans, and cilantro to make a delicious and nutritious dinner. These are the perfect taco for Taco Tuesday!

  • Sweet potatoes – Cut and cube medium sweet potatoes evenly to help ensure the sweet potatoes cook together on a baking sheet. Roast the potatoes for a crispy and soft texture added to the tortillas.
  • Olive oil – Drizzle the oil over the top of the sweet potaotes. This allows the sweet potaotes to have a golden brown outside with a soft inside.
  • Taco seasoning – Make your own homemade taco seasoning or pick up a packet at the store. This is a great addition to take your sweet potaotes to the next level.
  • Minced garlic – Every taco needs to have garlic! It is a delicious combination.
  • Onion powder – Give these tacos just a hint of onion powder that helps offset the flavors.
  • Diced green chiles – Added in for heat! If you like it spicy then add these to the bean filling.
  • Black beans – This is used for the black bean filling. It is the best way to boost the black bean mixture and create a special sauce with seasonings to help make these tacos over the top!
  • Tomato juice – The black beans need tomato juice to help them soften and be smooth and creamy. Tomato juice also has a lot of flavor to it and balances out the flavors.
  • Cilantro – Garnish the sweet potato tacos just right!

Step-By-Step Instructions

These sweet potato cubes go perfectly with tacos and make the perfect combination! Add your favorite toppings and enjoy this favorite sweet potato taco recipe!

  1. Prepare – Place your diced sweet potatoes in a large bowl. Drizzle with olive oil and add the taco seasoning and salt and pepper. Toss until even coating.
  2. Layer – Use your largest cookie sheet. Spread the potatoes out over the sheet in a single layer. Make sure they aren’t touching as much as possible.
  3. Bake – Cook the potatoes for 35-40 minutes, flipping every 10 minutes. This will ensure they are crispy on all sides. You will know they are done when the potatoes are crispy and browned on all sides.
  4. Cook – While the potatoes are cooking, make the black bean filling. Heat oil in a large skillet. Add spices and green chiles. Cook until the garlic is fragrant.
  5. Combine – Add the black beans, tomato juice, and cilantro. Add salt and pepper to taste. Cook over medium heat until most of the liquid is gone.
  6. Serve – Once the potatoes and filling are done, assemble your tacos! Serve with any taco toppings you like. I chose avocado, cilantro, and cotija cheese.

For Sweet Potatoes

  • Preheat oven to 450 degrees. Place diced sweet potatoes in a large bowl. Add olive oil, taco seasoning, and salt and pepper. Mix until evenly coated. Spread potatoes out on a greased baking pan. Make sure they are in one layer and not touching. Bake for 35-40 minutes, turning every 10 minutes. Bake until potatoes are crispy and browned around the edges.
