Pineapple Delights

Pineapple Delights.  The name says it all… these are simply DELIGHTFUL! They serve these at the Polynesian Cultural Center in Hawaii where I used to work as a waitress. (I know you are probably thinking “where HASN’T this girl worked?”… I know, I ask myself that sometimes too!) If you ever visit the PCC you simply MUST try one of these!

Ingredients

  • 1 pineapple***
  • pineapple, sliced into tidbits
  • peach, diced
  • mango, diced
  • banana, sliced
  • rainbow sherbet

Instructions

  • Cut the pineapple in half horizontally and scoop out the fruit (If you have one of those pineapple corers, that works the best. If you don't have one, just cut out the fruit out with a knife and spoon.) When it is all hollowed out, put the fruit in the bottom, then top with the sherbet. Garnish with flowers or the leaves from the pineapple crown.
  • ***Many people think that if you can easily pull a leaf out of the crown the pineapple is ripe, however this is not an indicator of ripeness. The most important thing is the smell. If it has a fresh, tropical smell and has no discoloration, that is the best indicator.
