Pouring syrup onto a stack of waffles with a pad of butter.

I love making waffles from scratch because they are a breeze to throw together and really doesn’t take much more effort than buying a box mix. Plus, homemade waffles taste far better than store-bought mix waffles. No weird ingredients or preservatives here. Just simple ingredients from your pantry. If you want to take your waffles to the next level, try them with some of our homemade syrups (or favorite topping ideas) below!

When it comes to easy breakfast ideas, you can never go wrong with a classic family favorite like these waffles. Much like our homemade pancakes, these waffles are made from scratch with simple ingredients. Try serving them with our easy hash browns and a side of sausage links and/or bacon to complete your breakfast!

Ingredients in Homemade Waffles

Ingredients to make homemade waffles, including flour, milk, melted, butter, eggs, vanilla, sugar, baking powder and salt.
  • Dry ingredients: All-purpose flour, granulated sugar, baking powder, salt.
  • Eggs: These will be separated into yolks and whites for the best texture. If you are in a hurry you can just beat them and add them to the batter without separating.
  • Milk: Any kind of milk will work great. I usually opt for whole milk because that’s what I keep on hand.
  • Butter: I use salted butter, melted.
  • Vanilla extract: Use a good, high-quality vanilla or use our homemade vanilla extract recipe.

How to Make Waffles from Scratch

Mixing bowl with batter base and a whisk.
  1. Separate the egg yolks and whites. Whisk the yolks in a mixing bowl until smooth (you can use a whisk, hand mixer, or stand mixer for this). Add the milk, melted butter, vanilla, flour, sugar, baking powder, and salt to the yolks and mix just until everything is combined.
Glass mixing bowl with batter mix and spatula folding in the whipped egg whites.
  1. n a separate bowl, beat the egg whites until they’re light and fluffy, then gently fold them into the batter.

  1. Preheat your waffle iron until hot. Lightly coat it with cooking spray, then pour in the batter (amount will vary based on your waffle maker). Cook until golden brown and crisp or until the waffle iron indicates they are done.

  1. Serve warm with syrup, jam, fresh berries, or whipped cream.

Homemade Waffle Mix

If you make waffles often and like the idea of just pulling out a pre-made mix to make your waffles, you can make your own waffle mix by combining the following from this recipe:

  • Flour (2 cups)
  • Sugar (1 Tablespoon)
  • Baking powder (1 Tablespoon)
  • Salt (¼ teaspoon)

When making a pre-made mix, I quadruple the recipe (so 8 cups flour) and store in a plastic container. The dry mixture will keep for up to 6 months in a cool, dry pantry. If you want to make a quick mix of batter, just add 2 cups of the dry mix with the “wet” ingredients below (same amounts as below). I am including a quick printable below so you can tape it to your container for quick access. You can even skip separating the eggs if you are in a hurry (it makes the waffles a little more dense but they will still taste great). You can throw all the ingredients in a blender to mix or just stir them all together by hand until smooth.

Waffle Makers

Waffle makers come in all shapes and sizes, and you really can’t go wrong with most of them. Look for a dark, nonstick griddle for easy release and cleanup, and consider options like adjustable cooking times, removable plates, or a rotating feature for even browning. I’ve collected a few favorites over the years (I literally have 5 of them). From a classic round waffle maker and a mini Dash to a Mickey-shaped one for the kids… and each serves a different purpose. You can find links to my go-to waffle makers below if you’re looking to upgrade yours.

Classic Round Waffle Maker – My go-to for traditional waffles or quick waffle pizzas (just skip the sugar, add toppings, and close the lid until the cheese melts).

Dash Mini Waffle Maker – The one I use most! Perfect for small waffles, “chaffles,” or freezer-friendly waffles you can reheat in the toaster for a quick breakfast.

Mickey Waffle Maker – My kids’ favorite! It makes adorable Disney-style waffles that taste just like the ones at the parks.

Square Belgian Waffle Maker – Ideal for thick, fluffy Belgian waffles — and it even cooks wavy, crispy bacon perfectly.

Waffle Cone Maker – Great for homemade waffle cones or keto wraps. For crispy cones, I like using the Krusteaz waffle cone mix.

Freezing and Re-Heating Waffles

Leftover waffles actually freeze and re-heat great, especially when you do it the right way. Let your waffles cool completely and then lay them on a baking sheet in a single layer. Place the baking sheet in the freezer and allow to freeze for at least 2 hours. After they become nice and frozen, you can place them in a zip-top freezer bag for long term storage. I like using my Dash Mini Waffle Maker (see below) when freezing waffles because they are the perfect size to pop in the toaster and reheat (like Eggo waffles). You can also re-heat by placing the waffles on a baking sheet lined with parchment paper in the oven and baking at 350-degrees F for 13-15 minutes.

Frequently Asked Questions

What’s the secret to making waffles crispy?

The key is a hot waffle iron! Make sure it’s fully preheated before adding your batter, and give it a light spray of oil or butter so the edges crisp up nicely. A hot surface locks in that golden crust while keeping the inside soft and fluffy.

Can I make waffle batter ahead of time?

It’s best to cook the waffles right after mixing the batter. If it sits too long, the baking powder loses its lift and the waffles won’t be as light and airy. You can, however, mix your dry ingredients in advance to save time later (see above on how to do this).

Why do my waffles stick or turn out soggy?

This usually happens when the waffle iron isn’t hot enough or the plates aren’t greased. Make sure your waffle maker is fully preheated and lightly coated with cooking spray. Also, resist opening it too early. Wait until steam stops coming out for the best texture.

Flavored Syrups for Waffles

Looking for a more seasonal syrup? Try our coconut syrup or orange syrup in the summer, caramel syrup or pumpkin spice syrup in the fall, or try our gingerbread syrup during the holidays. Don’t forget to top it all off with some homemade whipped cream!

These Homemade Waffles are crisp on the outside, fluffy on the inside, and perfect for any morning. If you make them, I’d love to hear how they turned out! Leave a rating and comment below with your favorite syrup, toppings or mix-ins! 🧇💛

  1. This recipe did not work for us. 1/2 cup melted butter was way too much for only a recipe of 2 cups of flour. The batter was so runny and oily. The waffles never even rose in the waffle iron. They came out mushy, oily and flat and not edible. What a bummer to waste a bunch of ingredients.

    1. Hi Katie- I’m not sure what could have gone wrong. What you see in the pictures is the exact recipe from the recipe card. they should be light and fluffy. Do you have fresh flour? What kind of flour did you use? Also what butter did you use? This definitely shouldn’t have happened. I am curious to see what would happen if you halved the amount of butter for your own personal recipe?

Flavor of the waffles was fantastic. However, the batter was so running you couldn’t make a full size waffle or the batter ran over the edge of waffle iron. I checked and double checked the ingredients list and I followed to the “T”. Like I said the flavor was great!

    1. This could be due to several things, elevation or brand of ingredients used, next time simply add a little more flour until the consistency is right. Hope this helps!

  3. First time making this. I almost didn’t with the whisking and folding of egg whites. I gave it a try am glad I did, came out great nice and fluffy will make again.

This is going to be my breakfast request for Valentine’s Day! I’m not a morning person, but I would leap out of bed for these waffles!
