Make your favorite Costco-style turkey roll ups at home! A quick and tasty recipe that’s perfect for appetizers, school lunches, or picnics.

Have you ever had the turkey roll ups from Costco? I love them so much because they are perfect for every occasion from simple school lunches to beautiful party platters. We have taken them on hikes and camping trips and even served them at baby/bridal showers. Now with this recipe you can make them at home for literally a fraction of the cost of the pre-made ones at Costco. And the best part? You can customize them to your tastes!

What’s in the Costco Turkey Roll Ups (Pinwheels)?

Ingredients to make turkey roll ups including lettuce, tortillas, cream cheese, sliced tomatoes, cranberry sauce, turkey slices, and Swiss cheese.

Tortillas – I liked to use the giant, burrito-sized tortillas. Smaller tortillas won’t roll up as well and you will only be able to get a few little pinwheels per tortilla. You can also use a dedicated “wrap” tortilla. Personally I like to stick with the regular or whole wheat wraps for this recipe but you can always experiment with different wrap flavors.

Cranberry Cream Cheese Spread – You can buy a pre-made cranberry cheese spread but honestly it’s just as easy to make your own. Just combine the cream cheese and a few tablespoons of cranberry sauce. Adjust the ratios to your liking.

Cheese – Costco uses Swiss cheese on their roll-ups but you can also use Provolone, Havarti, Gouda, Cheddar, or your favorite slice-able cheese.

Turkey – Regular, deli-sliced turkey is the best for this recipe. I like to use oven roasted or honey roasted for these wraps because they have mild flavors and don’t overpower the flavors of the other ingredients.

Toppings – Costco simply uses romaine lettuce and thinly sliced tomatoes in their wraps and to be honest, that’s all it really needs. The only variation I will ever do is maybe use some baby spinach instead of romaine or spread on a little extra cranberry sauce over the cranberry cream cheese layer.

How to Make Turkey Roll Ups

  1. First, lay out the tortilla on a clean surface or cutting board.
  2. Combine cream cheese and cranberry sauce to make the cranberry cream cheese spread, then evenly spread over the tortilla.
  3. Layer on cheese, turkey, lettuce, and tomatoes then roll up tightly.
  4. Wrap in plastic wrap and refrigerate at least 30 minutes and up to 24 hours.
  5. When ready to serve, remove from plastic wrap and use a very sharp knife to cut into 1″ slices.

Tips and Suggestions

Use fresh tortillas – Soft, fresh tortillas that are nice and pliable work best for these wraps so they don’t crack or tear when rolling. Room temperature tortillas work best.

Slice the tomatoes very thin – Thick tomatoes don’t work well with roll ups because they won’t roll up great and they will also get squished. Use a harp knife and slice them thin. The thinner the better.

Love cranberry? Feel free to spread on a little extra cranberry sauce over the cream cheese layer for more of a cranberry kick.

Use Baby Spinach – As mentioned above, baby spinach is a great alternative to romaine lettuce. It isn’t as crunchy but it rolls up better and tighter. It’s not what Cotsco uses but personally I like it just as much as using romaine.

Let em chill – Roll tightly and then wrap in plastic wrap and chill for the best results. The rolls will stay together better and slice more easily.

Make ahead – You can make these ahead and refrigerate for up to 24 hours before slicing and serving. If making ahead of time I like to salt the tomatoes a little but to draw out excess moisture, and then pat them dry with a paper towel so they don’t make the tortillas soggy. No one likes a soggy roll up!

Ingredients

  • 6 ounces cream cheese (softened)
  • 3 tablespoons whole berry cranberry sauce
  • 3 burrito sized tortillas
  • 1/4 pound sliced deli turkey (about 6 large slices)
  • 12 slices Swiss cheese
  • 4 romaine leaves
  • 1 tomato, thinly sliced

Instructions

  • Combine cream cheese and cranberry sauce and stir until well combined.

  • Spread mixture evenly onto each tortilla.

  • Place sliced cheese over the top of the cream cheese mixture, covering as much of the area as you can.

  • Place turkey over top of the cheese and then lay the romaine leaves and sliced tomato in a line down the middle.

  • Starting at one end of the tortilla, parallel to the line of lettuce and tomato, roll tightly into a log-shape.
    Wrap the rolled tortillas in plastic wrap and refrigerate for 30 minutes to 1 hour or until ready to serve. This helps them firm up and makes slicing easier.

  • Remove plastic wrap and slice into 1" slices and serve immediately.
