This sweet pea soup was a personal favorite of mine growing up. It’s simple, savory with a little sweet, and delicious.

I can’t remember how many times I begged my mom to make this for me as a kid. Now as an adult, I make it up all the time for myself for lunches, the leftovers store and re-heat easily in the fridge, and the best part is that you use milk, not cream, so it is also very calorie friendly! I have to admit, I love eating this with saltine crackers crumbled all over the top! But this soup also pairs well with some sourdough bread or a sandwich.

Ingredients in Basil and Sweet Pea Soup

  • Butter – not margarine
  • Flour
  • Milk
  • Kosher salt and pepper
  • Fresh basil – or dried basil
  • Can of sweet peas

Start with the Basics

For those of you that are fairly new to cooking, this is a great recipe to learn how to do roux, which is basically a base for making all kinds of creamy soups. For this recipe you melt together flour and butter and gradually add milk and some salt. This gives you your basic roux base. From here, you can make all types of soups. Add broccoli and cheese for a creamy broccoli soup, add corn and potatoes for a corn chowder, and for this particular soup, you add sweet peas and basil.

Dipping crusty sourdough bread in this soup would be delicious! Another great thing would be any type of sandwich, especially a ham sandwich. Keep it simple! A slice of good bread with fresh mozzarella balls or a thin slice of fresh mozzarella cheese and olive oil drizzled on top and fresh black pepper would also be great.

Ingredients

  • 1/4 cup butter not margarine
  • 1/4 cup flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon finely chopped fresh basil or 1 teaspoon dried basil
  • 14 ounce can sweet peas drained

Instructions

  • In a saucepan or soup pot over medium-low heat, melt the butter then stir in the flour.
  • Gradually whisk in the 3 cups of milk.
  • Bring heat to medium and continue to stir until the mix begins to bubble, boil, and thicken.
  • Add salt, pepper, basil, and sweet peas (drained) and cook another minute or two.

Notes

  • On top of each soup, garnish with a sprinkle of fresh basil leaves.
  • Enjoy your soup! This recipe is about as easy as it gets– no blender or batches here! Truly a one pot soup.

    Just ran across this recipe…. it’s amazing!!!!!. I caramelized 1/2 of a white onion. Made the roux with the butter and flour as the recipe called for.
    Then followed the recipe from the the roux on… such a savory, creamy and delicious soup. TOTAL COMFORT FOOD 🤤

  2. OK this is going to sound sort of weird but if you throw in a can of drained white tuna and leave out the basil you nailed the recipe for a dish my mother made when I was a kid. She called it tuna wiggle and it was something her mother made. They ate it over toast points. I believe its a New England thing 😉

      1. Has to be New England or French Canadian recipe based because I went to work and told the ladies about your soup and my mother’s recipe and everyone had a story. Some used shrimp some use salmon and some use canned milk instead of regular milk. Supposedly makes it sweeter (and we are not talking the sweetened condensed milk you use in baking) That was a funny side story! Now not only have I have to make your Basil Sweet Pea soup for the next pot luck at work I have to make Tuna Wiggle for supper. Comfort food 101. Thank you for food memory!
