These Thai Chicken Skewers with Cucumber Yogurt Dip have the most amazing flavor! The Thai spices on the chicken are so good complemented with the cucumber yogurt sauce for dipping (which is an authentic and incredibly delicious sauce from our friend from India). I am completely in love with Thai and Indian flavor dishes. If you have been too nervous to step out of your food comfort zone these skewers are a great place to start. Try them out for your next BBQ, you will not be disappointed! Great as an appetizer or a main dish. The best part is that there is so much flavor and so few calories!!
Ingredients for Thai Chicken Skewers
- Chicken (chicken breasts or boneless skinless chicken thighs)
- Marinade
- Garlic
- Cilantro
- Fish Sauce
- Sesame oil
- Curry powder
- Cumin
- Paprika
- Cucumber Dipping Sauce
- Greek yogurt
- Cucumber
- Carrot
- Cilantro
- Milk
- Salt and black pepper (to taste)
- Optional Ingredients (can be added to the skewer for more flavor or as a garnish)
- Red bell peppers
- Red onion
- Zucchini
- Sliced limes (for garnish)
Cooking Methods
We love cooking these skewers on our outdoor gas grill or charcoal grill but sometimes the weather just doesn’t cooperate. An indoor grill pan or griddle is a solid option if you can’t use an outdoor grill. You can also cook these skewers in the oven at 350-degrees F for 15-20 minutes or you can place them in the broiler for 4-5 minutes on each side or until cooke through. No matter how you cook them, be sure to soak the skewers for at least 20 minutes if they are wooden. Metal skewers can also be used if wooden skewers aren’t available.
What Goes Well with Grilled Chicken Skewers
We love serving these skewers with plain or flavored Jasmine rice or roasted vegetables. We like to flavor our Jasmine rice with a little lemon juice or lime juice and some chopped cilantro to give it a little extra boost. Serve with soy sauce on the side if needed. You can also serve these skewers with our Easy Yellow Rice, Cilantro Lime Rice, or Rice Pilaf.

Thai Chicken Skewers with Cucumber Yogurt Dipping Sauce
Equipment
Ingredients
- 3 boneless skinless chicken breasts
- wooden skewers (soaked for 20 minutes)
Chicken Marinade
- 4 garlic cloves minced
- 1/2 bunch of fresh cilantro
- 2 tablespoon fish sauce
- 1 tablespoon sesame oil
- 2 teaspoon curry powder
- 2 teaspoon cumin
- 2 teaspoon paprika
Cucumber Yogurt Dip
- 1 cup plain greek yogurt
- 1-2 tablespoons cilantro chopped
- 2 teaspoon cucumber chopped
- 2 teaspoon carrot chopped
- 1 teaspoon milk
- salt and black pepper to taste
Instructions
- Soak the wooden skewers in water for 20 minutes.
- Blend all the chicken marinade ingredients in a food processor or blender.
- Cut the chicken breasts into 4 to 5 long strips. Place strips into a large bowl, stir in the marinade, and refrigerate for at least 30 minutes.
- Combine all the yogurt dip ingredients in a medium size bowl and refrigerate.
- Thread the chicken onto the wooden skewers.
- Grill over medium heat until cooked through about 5-6 minutes on each side (165-degrees F internal temperature)
- Serve chicken with a side of yogurt sauce for dipping.
Notes
- Don’t forget to soak the skewers for at least 2o minutes if using wooden skewers
- Try dipping the grilled chicken in peanut sauce or hot honey
- Serve with cooked Jasmine rice or basmati rice
- Store leftovers in an airtight container for up to 4 days. For best results, don’t reheat in the microwave. Heat in a non-stick skillet over medium heat with a splash of water. Cover and allow to be heated through.
For the yogurt dip… is it teaspoons or Tablespoons?? There is very little flavor beyond the yogurt with such small quantities of additions. Thanks.

i would serve pad thai with this or/and peanut sauce and cucumber salad. you could also fry wantons too!
