A Disney Totcho Story

I first fell in love with Totchos at Woody’s Lunch Box in Toy Story Land at Disney’s Hollywood Studios. It’s a walk-up window with the most crave-worthy, no-fuss food—after one bite I knew I had to recreate them at home. My version keeps the spirit of that Disney favorite (crispy tots, chili, and cheesy goodness) with toppings you can customize so everyone gets exactly what they want.

Make a meal out of Totchos by serving with Sliders or Homemade Burgers, Grilled Corn Salad, Fresh Fruit Salad, or an ice-cold Dirty Dr Pepper or Cherry Limeade. They’re also a great side for BBQ nights.

Ingredients You’ll Need

Ingredients to make Totchos. Tater Tots on a sheet pan. Bowls of chili, queso, sour cream, cheese, green onions, and Fritos on the counter
  • Frozen tater tots – Bake straight from frozen for max crisp or even better, make Air Fryer Tater Tots!
  • Chili with beans – Use thick canned or homemade; simmer to reduce if thin.
  • Queso cheese dip – Warm until pourable and keep over low heat while assembling.
  • Shredded cheddar cheese – Sharp, freshly grated melts best.
  • Fritos – Sprinkle at the end for crunch; crushed tortilla chips or Doritos also work.
  • Sour cream – Cool, creamy finish; Greek yogurt is a tangy swap.
  • Green onions – Fresh, mild bite; chives or finely diced red onion work too.

More Topping Ideas

  • Proteins: seasoned ground beef or turkey, pulled pork, shredded chicken, bacon, chorizo
  • Cheeses: Monterey Jack, pepper jack, cotija, crumbled queso fresco
  • Fresh add-ons: avocado or guacamole, pico de gallo, diced tomatoes, corn, jalapeños, red onion, cilantro, lime wedges
  • Sauces: salsa, hot sauce, chipotle crema, ranch, BBQ sauce
  • Beans & extras: black beans, pinto beans, black olives, pickled jalapeños

How to Make Totchos

Tater tots cooked on a baking sheet
  1. Bake the tots – Spread tots on a sheet pan and bake per package directions; for extra crunch, add 5–10 minutes until deep golden and crispy.
Bowls of chili, queso, sour cream, cheese, green onions, and Fritos on the counter
  1. Warm the toppings – Heat chili and queso; prep green onions (and any other toppings).

  1. Layer – Divide tots and chili into bowls, drizzle with queso, add cheddar, then finish with Fritos, sour cream, and onions.

  1. Finish & serve – Top with Fritos (so they stay crunchy), dollops of sour cream, and green onions. Serve immediately.

Recipe Tips

  • Keep it fresh: Make your own Chili or your own Queso for a homemade touch!
  • Crisp is king: Bake tots longer than the box says and avoid crowding the pan.
  • Hot on hot: Warm chili and queso so they don’t cool the tots.
  • Layer smart: Cheese melts best when it hits hot chili/tots; add Fritos last to keep them crunchy.
  • Air fryer option: Air fry tots at 400°F until deeply crisp; assemble and serve.
  • Party trick: Set up a “Totchos bar” with toppings in bowls so everyone builds their own.
  • Sheet-pan > skillet: A large surface area keeps tots crisp and makes serving easy.
  • For family-style: mound hot tots on the sheet pan, spoon on chili, drizzle with queso, and sprinkle with cheddar. Return to the oven 2–3 minutes to melt.

Frequently Asked Questions

What are Totchos?

Totchos = tater TOT + naCHOS. They’re nachos built on crispy tater tots instead of tortilla chips, loaded with chili, cheese, and your favorite toppings.

Can I make Totchos gluten-free?

Yes—use certified gluten-free tater tots and chili (some brands add wheat-based ingredients). Always double-check labels.

Are Totchos Mexican?

They’re nacho-inspired, but Totchos are a modern American bar/snack food. The flavors can absolutely lean Tex-Mex depending on your toppings.

How do I keep the tots from getting soggy?

Bake (or air fry) until very crisp, heat toppings, and don’t over-sauce. Add wet toppings right before serving.

Can I make these vegetarian?

Totally—use vegetarian chili and load up on beans, corn, avocado, and extra cheese.

How do I scale for a crowd?

Use two sheet pans; keep the first batch in a warm oven (200°F) while you finish the second. Serve buffet-style.

Make Ahead & Storage

  • Make ahead: Bake tots up to 1 hour ahead, keep on the pan at 200°F to hold. Warm chili/queso separately. Assemble right before serving.
  • Fridge: Store leftovers in an airtight container for up to 3 days (tots will soften).
  • Reheat: Spread on a pan and bake at 425°F or air fry until re-crisped. Add fresh toppings after reheating.
  • Freezing: Not recommended once assembled; the texture suffers.
