Here’s another healthy recipe for you – Chicken Lime Tacos! I love how fresh and summer-y soft tacos taste. Yum! These are so easy to whip up for a quick summer dinner. You just can’t go wrong with cilantro and lime! To turn this into a grilled chicken soft taco, just use the sauce ingredients as a marinade and marinate the chicken for a few hours (or overnight). Heat up the grill and throw the chicken on until cooked through– slice and serve in the tacos! We did this last time and they were AMAZING! I highly recommend trying it!
- Sauté chicken in a medium skillet in a little oil for a few minutes until chicken becomes white all around. Combine vinegar, lime juice, sugar, salt, pepper, green onion, garlic and cilantro and add to chicken. Simmer for an extra 10-20 minutes until chicken is cooked through. Add chicken to tortillas and top with lettuce, tomato, cheese, avocado, cilantro, salsa, sour cream, or any other taco topping you like!
