My husband is actually a great cook! He is always a great help in the kitchen, too. I wouldn’t be able to make half the things I do without his help. Sometimes he actually takes over and does the cooking himself (I love it when he does this..) Anyway, this is a recipe of his that I absolutely LOVE! This salsa is definitely restaurant-quality! Another nice thing about Jared’s Salsa is that it is easy to make, he made this salsa in about 10 minutes!
Ingredients
- 1 can (15oz) corn
- 1 can black-eyed peas
- 1 (10oz) can extra hot Rotel tomatoes
- 3 (15oz) cans diced tomatoes
- 1 can (small) diced olives
- 1 medium chopped onion
- 1 green pepper, chopped
- 1 bunch cilantro, chopped
- 2 tsp minced garlic
- 6-8 oz zesty Italian dressing
- Juice from 2 limes
Instructions
- Mix all ingredients together and let sit overnight.

I’ve had a similar salsa but with a couple of chopped avocados in it, it’s the best!
