This no bake cinnamon peanut butter granola bar recipe is a fun snack to make ahead for after school, soccer games, breakfast, or mid-morning energy pick-me-ups. So much goodness in one little snack. We love to pair creamy or crunchy Jif peanut butter with juicy dates, dried apples, oats, almonds, and a hint of cinnamon for these filling and satisfying snack bars. Read on for more on this delicious recipe, plus some hacks for smooth and happy mornings!

Ingredients in Peanut Butter Granola Bars

  • Dates – or raisins
  • Jif Cinnamon Peanut Butter
  • Honey
  • Almonds
  • Dried apples
  • Quick rolled oats
  • Kosher salt
  • Vanilla extract

Suggestions for this Recipe

  • Make sure you have a good food processor on hand to blend the dates into a nice jam-like consistency.
  • If you don’t like dates or don’t have any on hand, raisins will work great too!
  • Try dried apricots, bananas, mangos, or any other dried fruit in place of the dried apples for different flavors and textures.
  • Substitute pecans, walnuts, or any other favorite nuts in addition to the almonds.
  • If you can’t find any cinnamon flavored peanut butter at your grocery store, add a quarter teaspoon of cinnamon into your mixture. Or, try any other flavor of Jif peanut butter. They’re all so tasty!

These No-Bake Cinnamon Peanut Butter Granola Bars are a perfect energy source. Creamy peanut butter loaded with all sorts of yummy goodness makes this a delicious snack any time hunger strikes!

Ingredients

  • 1 cup dates raisins will work, too
  • 1/4 cup Jif Cinnamon Peanut Butter
  • 1/4 cup honey
  • 3/4 cup almonds we did whole and sliced mixed
  • 1/2 cup dried apples
  • 1 1/2 cups quick rolled oats
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon vanilla

Instructions

  • Place dates in a food processor (or blender) and process until it becomes like an extra thick, sticky jam (you should be able to form a ball in your hands).
  • Place peanut butter and honey in a medium-sized microwave-safe bowl and microwave for 30-45 seconds.
  • Add date mixture to the melted peanut butter and honey and stir. Add remaining ingredients and stir until well combined.
  • Place foil or wax paper in an 8×8 glass baking dish and press firmly and evenly with hands.
  • Cover with plastic wrap and refrigerate at least 20 mintes.
  • Remove from fridge and cut evenly into rectangles. (should make about 10-12).
  • To store, wrap individually in wax paper or plastic wrap or store together in an air-tight container.

Notes

Additional recipe suggestions:
  • Add coconut for fiber and flavor
  • Try dried blueberries or cranberries for fun flavor, color, and texture
  • Mix in mini chocolate chips or white chocolate chips for a fun variation
  • A sprinkle of chia seeds provide an excellent source of fiber, as well as promote heart health
  • Cashew pieces or sunflower seeds can add salt and crunch
