I realize we are getting out of soup season but who knows.. maybe there will be a few cold days yet before it starts getting warm so you will have a chance to make this. I adapted this recipe from the Taste of Home magazine. It was delicious! Very easy to make.
1 pkg. (9oz) refrigerated cheese tortellini
2 cans (10oz) Campbell’s tomato soup
2 c. chicken broth
2 c. milk
2 c. half-and-half
1/2 c. chopped oil packed sun-dried tomatoes
1 tsp onion powder
1 tsp garlic powder
1 tsp dried basil
salt and pepper to taste
1 c. shredded mozzarella cheese
shredded mozzarella or Parmesan cheese (for topping)
Cook tortellini according to package directions. Meanwhile, in a large soup pot combine soup, broth, milk, cream, tomatoes and seasonings. Heat through, stirring frequently. Drain tortellini well and add to soup. Stir in cheese. When cheese is melted serve immediately and sprinkle Parmesan or mozzarella cheese over the top.












I love tortellini! This soup looks so creamy and delicious. Can't wait to try it.
Just made this tonight for dinner, it was AMAZING! I added some cubed chicken to it, it was so good. My grocery store was out of the jars of oil packed sun-dried tomatoes, so I grabbed the closest thing which was a jar of sun-dried tomato pesto. I added about 1/4 cup of the pesto. It was so good. mmmm thank you
Made this last night & the whole family LOVED it!!! My husband is a picky eater too, so that says a lot:) We had grilled cheese sandwiches on the side & it was the perfect combination. We will definitely be making this again!
I didn't realize it made so much. I'll cut it in half next time. But we all loved it. It was my first time buying sun-dried tomatoes, but they are a must for this recipe. Thanks!
