Every fry is flavorful, covered in a mixture of dried herbs and fresh herbs such as dried oregano, dill, crumbled feta cheese, a squeeze of lemon, red onion, and the essential, a sprinkle of olive oil. Dipping sauce varies, some people like tzatziki, while others like a lemony aioli. The consensus is that these fries are crispy, ultra flavorful, and they pack a flavorful punch. While it’s contested where they originated, we know they are greatly enjoyed in Greece, and everywhere. It seems no one can get enough of these fries!

How to Make Greek Fries

  • To begin, wash the potatoes and cut them into your desired fry shape. Soak in cold water for at least 30 minutes. Soaking for longer results in crispier fries.
  • Drain the fries and pat them dry. Add the fries to a bowl and toss in oil and spices.
  • Place the potatoes in a single layer on a baking sheet. Try to spread them out so that they are not touching.
  • Bake at 375 for 20 minutes. Flip the fries then turn the oven up to 425 and bake for 20-25 more minutes. If you want extra crispiness, broil for a few minutes until the fries are golden brown and crisp to your liking.
  • Place fries on a plate or platter and top with feta cheese and fresh dill.

Recipe Tip

cut potatoes soaking in water

Soaking the cut potatoes in cold water removes some of the starch on the potatoes which makes the fries cook up crispier. You can actually soak the potatoes for a couple hours or even overnight.

Notes

  • Greek Fries also taste great dipped in tzatziki sauce or garlic aioli.
  • I like to use the feta that comes in a block instead of crumbles. The feta from a block is creamier.
  • To make things easier you can use frozen french fries. Cook the fries halfway, according to package directions and then toss with spices. Finish cooking according to package directions.
