Crockpot Cashew Chicken

In addition to being delicious, this Crockpot Cashew Chicken is super easy to make! You can have this ready and in the crock pot faster than you can get your kids in the car and drive to the nearest Chinese place for take-out. My family absolutely LOVED this recipe! We served it with some steamed veggies and it was the perfect pairing. You can stir veggies into the crockpot with this dish or you can serve it on the side, whatever is easiest for you!

Crockpot General Tso’s Chicken

I love this version of General Tso’s chicken. More times than not, General Tso’s chicken is what I will order at Chinese restaurants. It has a little more of a kick than sweet and sour chicken and I like the flavor better. I came up with this crock-pot version the other day when I didn’t have a lot of time later in the day to prepare dinner and fell I love with the ease and the flavor!

Crockpot Salsa Verde Chicken

This Crockpot Salsa Verde Chicken is so easy.. really, it is almost TOO easy. I have hesitated even putting it on here because it is so easy. Lucky for you, I changed my mind because it is so flavorful. And easy. Did I mention that already? I love making it on those days I really just don’t feel like making dinner. Most of the time we will serve this over just plain, cooked white rice and garnish with cilantro.

Crockpot Zesty Italian Dressing Chicken

This pasta dish is one of those great recipes you can make up in a flash. While it cooks the flavors all come together and make the chicken taste amazing! When it is ready the boneless skinless chicken breasts easily shred up. The zesty, creamy sauce, made with cream of chicken soup and cream cheese, can be served over noodles, rice, or even cauliflower rice. We like to serve it with steamed broccoli. You can’t beat a slow cooked meal that is easy, delicious, and family friendly!

Questions

Is it better to cook chicken on high or low in the Crockpot?

We recommend cooking chicken breasts on low in the crockpot when possible. On high, the chicken dries out and tends to be more tough.

Do you need to brown chicken before slow cooking?

It is not necessary to brown the chicken before slow cooking in most of our recipes. The only recipe that requires browning first is our General Tso’s Chicken.

Can you overcook chicken in a slow cooker?

Yes, and the overcooked chicken will be tough and dry. It is best to cook chicken breasts on low and check them after 2 hours. Internal temperature of the chicken should not exceed 165 degrees before letting the chicken rest.

Instructions

  • Place chicken breasts in the bottom of the crockpot.
  • Add chicken broth and top chicken with seasonings and butter.
  • Cover and cook on low for 3-4 hours. After 3 hours, check the internal temperature with a meat thermometer. The chicken should be between 155 to 165 degrees Fahrenheit (the temperature will continue to heat as it rests, so it's fine to remove it before it reaches the full 165 degrees).
  • Remove chicken from crockpot and let it rest for 5-10 minutes. Shred with forks or meat claws.
  • Return shredded chicken to Crockpot and combine with juices and keep warm until ready to serve.
