This crock pot buffalo chicken dip is a game day essential at our house! The spicy chicken and creamy, cheesy sauce with the tang of some blue cheese gives you all the flavor of buffalo chicken wings, but without the mess! This recipe makes a large batch perfect for a party, and the leftovers are great heated up in the microwave!
Ingredients for Easy Buffalo Chicken Dip
These simple ingredients make a creamy texture that is a hot dip recipe everyone loves! It is a delicious dip that can be shared over and over again. Skip the baking dish and throw all the ingredients into the crock pot to have a sharable dip for all your friends and family!
- Shredded chicken – See below for our tips to make the best-shredded chicken. Chicken breasts work best for this recipe because chicken thighs can be too fatty and make the dip greasy. You can also use canned chicken.
- Frank’s red hot sauce – Frank’s makes a buffalo-style sauce, but we think the traditional hot sauce tastes much better. The buffalo sauce has a little too much vinegar taste. This is similar to a buffalo wing sauce.
- Ranch dressing – We love using Hidden Valley Ranch, but you can use homemade as well. If you are a blue cheese lover, you can substitute blue cheese dressing for the ranch!
- Cream cheese – Cream cheese is what makes this dip so creamy and dipable! It also helps cool down the heat of the hot sauce.
- Cheddar cheese – Avoid using pre-shredded cheese if possible. Pre-shredded cheese is coated with a substance that keeps it from sticking. Unfortunately, that substance also keeps it from melting properly. You will achieve the best texture if you shred your own cheese from a block.
- Optional garnishes – I like to top this dip off with some green onions and blue cheese crumbles.
How to Cook Buffalo Chicken Dip in the Crock Pot
This is a simple dip that comes together quickly and easily! First, combine all the ingredinets and layer in the crock pot. Add sliced-up cream cheese on top and let the slow cooker do the rest of the work! Slice veggies, grab chips and crackers to start dipping!
- Combine – Combine the cooked, shredded chicken with Frank’s, and spread it into an even layer in the crock pot.
- Cut – Add ranch dressing and cheddar cheese and stir to combine. Cut the cream cheese into cubes and place on top.
- Slow cook – Place the lid on the crockpot and cook on high for 2-3 hours or low for 4-6 hours. About halfway through, stir in the cream cheese cubes.
- Toppings – Garnish with green onion and blue cheese crumbles if desired.
How to Make the Best Shredded Chicken
The easiest chicken to use for this dip is a pre-cooked rotisserie chicken. It is quick, easy to shred, and delicious! However, if you want to cook up some chicken breasts, we can give you all the tips for the perfect shredded chicken. You can read our full Guide to Cooking and Shredding Chicken, but we will share a few of our top tips!
- Butter – Add a little bit of butter to the pot. This will add flavor and help the chicken turn out really tender.
- Shred – Use your stand mixer or a hand mixer to shred the chicken. It is quick and easy! Using a mixer creates smaller pieces which make dipping easier.
- Temperature – Any time you are cooking chicken you will want to make sure it is heated through completely. Make sure there is no pink in the middle and an internal temperature of at least 165 degrees.
Recipe Tip
For extra cheesiness, you can sprinkle more cheddar cheese and blue cheese on top about 20 minutes before serving. Replace the lid and allow the cheese to melt on top.
