I love making this simple, three ingredient Chocolate Covered Pineapple for my family. It is so easy to make but it feels like a decadent treat! Its fun to try new topping combinations and I can even make it vegan and dairy free if I need to. Fresh pineapple is so delicious and its made even tastier by dipping it in chocolate!

Toppings are endless, but I can provide you with some ideas for your chocolate covered pineapple! Sprinkle unsweetened shredded coconut for a fun texture and tropical flavor. Looking for something new? Try flaky sea salt. This will melt in your mouth with the chocolate and pineapple, but add an interesting, salty/savory flavor. Flaky salt is easy to find in the grocery store in the baking aisle. Crush nuts like cashews or almonds and sprinkle on top for a delightful texture and delicious nutty flavor. Try placing fruit like freeze-dried strawberries or even fresh blueberries in the drying chocolate for a pop of fresh flavor! Finally, melt chocolates like white chocolate and dark chocolate and drizzle these on your chocolate covered pineapple for a beautiful look and yummy taste.

How to Make Chocolate Covered Pineapple

  • To begin making chocolate covered pineapple, cut pineapple into quarters or whatever shape you choose. Some like rings, others like squares. Set on a paper towel and pat dry. This will absorb excess moisture.
  • Next, in a microwave safe bowl, microwave the chocolate chips and coconut oil together in 30 second increments until fully melted. Stir well between each increment.
  • Line a baking sheet with a piece of parchment paper. Dip each pineapple piece in the melted chocolate and shake off any excess chocolate. Set the pineapple down on the parchment paper. If you are adding toppings, add them when the chocolate is still wet.
  • Place the baking sheet in the fridge and let cool until the chocolate is fully set. Enjoy your chocolate covered pineapple!

How to Cut a Pineapple

Cutting a pineapple yourself takes guts! But it isn’t hard, in fact, it’s pretty simple. All you need is a sharp knife and a sturdy cutting board that isn’t going to slip when the juices start running. There aren’t any tips or tricks, but there are many methods to doing it, this just happens to be one of them. To begin cutting the pineapple, cut off the crown and the base. The crown is the bit with all the green! After this, you have flat surfaces to work with. Stand the pineapple upright and slice off all of the skin. Be sure to get all the brown circles off, these are called “eyes” and they are very tough and don’t taste good. Next, cut your pineapple into quarters lengthwise. Remove the core at the center of each quarter. The core is the tough, lighter part of the pineapple, not good for eating, very fibrous. Now you have fresh pineapple ready to slice and eat! It’s a little harder to get pineapple rings, for this, you need a pineapple corer, which removes the core of the pineapple. But with this method that I described, you can get wonderful pineapple wedges!

How to Choose a Ripe Pineapple

A ripe pineapple is yellow at its base, although not burnt orange, this is a sign of being over ripe. When you put your nose to the base, your should smell pineapple. Give it a squeeze. The fruit should have give a little, not too hard. Finally, the ripe pineapple feels heavy when held, not hollow.

After you cut the pineapple into your desired shape, set them on a paper towel or cloth. Let the paper towel soak up excess moisture while you pat the tops dry with another paper towel or cloth. This will help the chocolate stick better. If the pineapple is too wet, the chocolate will slide off.

  • I love to sprinkle toasted coconut onto my chocolate covered pineapple.
  • To toast your own coconut, place shredded sweetened coconut flakes on a baking sheet. Bake at 350 for about 8 minutes, or until the coconut turns golden brown.
