This breakfast taco recipe is just what you need to start your morning off right! It is loaded with protein from meat and eggs, melted cheese, and sauteed vegetables for that added crunch. It is the perfect combination of healthy and delicious all wrapped in a tortilla.

Ingredients for the Best Breakfast Tacos Recipe

For your taco filling, add anything that you would put in a breakfast skillet or in a breakfast burrito, for the filling in this breakfast taco recipe we use. It is the

  • Breakfast sausage – Saute the sausage and cut it into bite-sized pieces.
  • Bacon – Cook the bacon in the air fryer, oven, or in on the stovetop to add to the mixture. You can even use microwaveable bacon if you are in a hurry. Slice the cooked bacon into small pieces.
  • Onion – Dice and chop the onion to saute for the caramelized taste and texture.
  • Red pepper – Chop the bell pepper into small pieces for a little extra color and flavor.
  • Scrambled eggs – Whisk together several eggs and make the perfect scrambled eggs that are fluffy for this breakfast taco recipe.

The topping list is endless! You can create and make so many varieties of breakfast tacos with so many toppings. Change your toppings depending on your morning mood!

  • Chorizo – A mixture of chopped smoked meat and seasonings made to slice and eat or cook.
  • Breakfast potatoes – You can use either diced potatoes or hashbrowns. Cook them according to the package.

How to Make Easy Breakfast Tacos

Wake up to these amazingly delicious breakfast tacos! They are full of all the flavors you need to start your day off right. Simply cook and saute the ingredients together, scramble eggs, and load them on your tortillas for a delicious morning meal. It is the perfect combination!

  1. Cook – Cook sausage links in a large non-stick skillet over medium heat until cooked through or follow package directions. Set aside on a paper towel.
  2. Saute – Cut bacon into smaller pieces and place back in the large skillet over medium-high heat. Cook until the bacon grease is released into the pan. Drain off the excess grease, but leave a tiny bit in the pan to sauté the vegetables. Add chopped red bell pepper and chopped onion. Cook with the bacon until onions become soft and transparent and the bacon becomes slightly crispy.
  3. Slice – Cut sausage into smaller pieces and add back to the pan.
  4. Scramble – Crack eggs into a medium bowl and beat with a fork until smooth. Move the sausage mixture to one side of the pan and pour the egg mixture into the other side to scramble. When the eggs are scrambled, gently stir the into the sausage mixture until combined.
  5. Assemble – Season with salt and pepper to taste if needed. The bacon may make the eggs salty enough. Remove from heat and assemble tacos. Serve over warm tortillas and top with your favorite toppings and sauces.

  • Salsa – Pico de Gallo is a refreshing blend of fresh tomatoes and spices to make a quick and easy salsa.
  • Sour cream – A creamy base that gives you a sweet and sour texture and flavor.
  • Spicy – Taco sauce or hot sauce Valentina, Tapatio, Cholula, or Sriracha are all easy sauces to pour on top of your breakfast tacos.
  • Garnish – Fresh limes and cilantro can be sprinkled on top for that added touch!

Assembling the Tacos

Before assembling your tacos, be sure to soften your tortillas. I use flour tortillas for breakfast tacos, so I just soften the tortillas for a few seconds in a microwave. If you are using corn tortillas, soften them in a skillet. Place about ⅓ cup of the sausage/egg mixture onto each tortilla, then top with your favorite taco sauce and sprinkle on any additional toppings. You really can’t go wrong when assembling these tacos. They are going to taste great, no matter what!

Egg or No Egg, It’s Up To You

The one debate in breakfast tacos seems to be whether or not to add egg to the mixture. If you want more of a “Texas-style” food truck-type breakfast taco, you can leave the egg out. Personally, I like to have a little bit of egg because it seems more “breakfast” to me, but not so many scrambled eggs that you can’t taste the other ingredients.

If you really like eggs, you can add even more than the recipe calls for. If you are serving a crowd, you may want them to be more egg-heavy, and that is totally fine. Eggs are a great source of protein and add that extra filling for this breakfast taco recipe.
