These tex-mex style breakfast tacos are filled with sausage, bacon and eggs and perfect for breakfast, brunch, or even dinner!

The BEST Breakfast Tacos

If you haven’t added breakfast tacos to your regular breakfast menu, you are missing out! This breakfast tacos recipe is SO easy and bursting with flavor. We love making these for brunch because they are so filling, you won’t be hungry again until dinner. My kids BEG for these tacos. Give them a try and you will see why!

Breakfast Tacos Ingredients

For your taco filling, add anything that you would put in a breakfast skillet or in a breakfast burrito, for the filling in this recipe we use:

  • Breakfast sausage
  • Bacon
  • Chopped onion
  • Chopped red pepper
  • Scrambled eggs

You can ALSO use…

  • Chorizo
  • Breakfast potatoes (or hash browns)
  • Black beans
  • Refried beans
  • Breakfast ham
  • Brisket
  • Veggies (mushrooms, zucchini, spinach, etc…)

Toppings & Sauces

You can go crazy with the toppings and sauces for breakfast tacos. Use any or all of these toppings:

  • Chipotle sauce (I LOVE Salsa Queen’s Chipotle Queso with these tacos– SO GOOD)
  • Pico de gallo
  • Salsa
  • Fresh tomatoes
  • Fresh diced onion
  • Shredded cheese
  • Cotija cheese (or queso fresco)
  • Diced avocado
  • Cilantro
  • Sour Cream
  • Taco sauce or hot sauce (Valentina, Tapatio, Cholula…)
  • Fresh limes (for garnish)

Assembling the Tacos

Before assembling your tacos, be sure to soften your tortillas. I use flour tortillas for breakfast tacos so I just soften the tortillas for a few seconds in a microwave. If you are using corn tortillas, soften them in a skillet. Place about ⅓ cup of the sausage/egg mixture onto each tortilla, then top with your favorite taco sauce, and sprinkle on any additional toppings. You really can’t go wrong when assembling these tacos. They are going to taste great, no matter what!

Egg or No Egg, It’s Up To You

The one debate in breakfast tacos seems to be whether or not to add egg to the mixture. If you want more of a “Texas-style” food truck-type breakfast taco, you can leave the egg out. Personally, I like to have a little bit of egg because it seems more “breakfast-y” to me but not so many scrambled eggs that you can’t taste the other ingredients. If you really like eggs, you can add even more than the recipe calls for. If you are serving a crowd, you may want them to be more egg-heavy, and that is totally fine.

These tex-mex style breakfast tacos are filled with sausage, bacon and eggs and perfect for breakfast, brunch, or even dinner!

  • 12 ounces pork sausage links (about 12 sausage links)
  • 8 slices bacon
  • 1 red bell pepper diced
  • 1 medium onion chopped
  • 3-4 large eggs (optional)
  • salt and black pepper to taste
  • 8-10 small flour tortillas



  • Cook sausage links in large non-stick skillet over medium heat until cooked through (or follow package directions). Set aside on a paper towel.

  • Cut bacon into smaller pieces and place back in the large skillet over medium high heat. Cook until the bacon grease is released into the pan. Drain off the excess grease, but leave a tiny bit in the pan to sauté the vegetables.
    Add chopped red bell pepper and chopped onion. Cook with the bacon until onions become soft and transparent and bacon becomes slightly crispy.

  • Cut sausage into smaller pieces and add back to the pan.

  • Crack eggs into a medium bowl and beat with a fork until smooth. Move the sausage mixture to one side of the pan pour the egg mixture into the other side to scramble. When the eggs are scrambled, gently stir the into the sausage mixture until combined.

  • Season with salt and pepper to taste if needed (the bacon may make the eggs salty enough). Remove from heat and assemble tacos.Serve over warm tortillas and top with your favorite toppings and sauces (see ideas above)
