Where to Find Mini Brie

Mini brie can be found at Costo and Trader Joe’s. Because those are national chains, you might have the best luck finding them there. I have seen mini brie wheels at my local grocery store, but you may not have them at yours.

I find it easier to put the Brie onto the pastry dough and then transfer them to the muffin tin. It helps the pastry to shape around the Brie.

Do you remove rind on brie before baking?

Keep the rind on. Not only is it edible, but it will also help the cheese keep its shape in your mini muffin tin while baking, giving you a nice wheel of cheese.

Can you freeze cranberry brie bites?

Yes freezing is a great idea. Bake your bites normally, let them come to room temperature, store in a single layer on a baking sheet in a freezer storage bag or freezer safe container where they will keep for up to 2 months. When ready to eat, heat up in the oven.

What if I can’t find mini wheels of brie?

You can also cut a regular wheel into cubes of brie to create this recipe. It will taste the exact same!

  • Muffin tin

Ingredients

  • 17.3 ounce package of puff pastry thawed, we love the Pepperidge Farms brand
  • 10 Mini Brie wheels or Brie wheel cut into smaller pieces
  • 1/2 cup cranberry sauce
  • rosemary sprigs

Instructions

  • Preheat oven to 400 degrees. Cut puff pastry into 3-inch squares. Place a mini Brie in the center of each.

  • Place each square with cheese into a greased muffin tin. Top with a spoonful of cranberry sauce and a rosemary sprig.

  • Bake for 15-20 minutes or until the puff pastry is golden brown and the Brie is slightly melty.

Notes

  • Add a drizzle of hot honey for extra flavor.
  • Use another fruit spread like fig jam, apricot jam, or raspberry preserves.
  • You can also use crescent roll dough instead of puff pastry.
