Thanks for this recipe, Elise! We love this dish! I think we have it for dinner more than we have it for breakfast. This is a must try!
Ingredients
- ½ lb cooked bacon, ham, or breakfast sausage(or any combination of the 3)
- chopped veggies (optional. We like to use broccoli & tomatoes. You can also do red peppers and onion if you want even more flavor)
- 12 eggs
- 1 c. milk
- 1 pkg. (1 b.) frozen shredded hash browns
- 1 c. cheddar cheese (shredded)
- 1 tsp. salt
- ½ tsp pepper
Instructions
- In a bowl, beat eggs and milk. Stir in all other ingredients. Put in greased 9x13 pan and bake at 350 for 45-55 min or until well set. Serve topped with salsa.

What size bag frozen hash browns?
A 1 Lb. bag. The one I used was actually about 2 Lbs. and I used about half of it.
How well does this keep in the fridge once cooked – it would probably take us a couple of nights to eat.
Probably 2-3 days. This makes a GREAT filling for breakfast burritos the next day or two!
Can you use the cubed hash browns instead of shredded?
Yes! I have done it before and it tastes great!
have you made this with no meat?
Yes! It's really good with just the eggs, potatoes, cheese, broccoli and diced tomatoes.
Have you ever frozen this dish to use at a later date?
I haven't.. if you try it let me know how it turns out!
do I need to cook the broccoli before hand if it's fresh?
could egg beaters be used instead of eggs ?
I guess you could.. I am not a fan of egg beaters so I have never used them in this recipe. I am sure it will be fine!
Can you make it ahead of time?
Yes! I always make it the night before but you can probably make it even earlier than that.
