The first time I had birria ramen was in Port Orchard, Washington. There was a little restaurant there that served birria in just about every way possible. The most surprising to me, at the time, was the birria ramen. I had to try it! Of course I ordered a couple birria tacos to dip into the leftover broth and it did not disappoint. As soon as I got home I started working on duplicating that dish. It was easy to get the flavors right since I already had a great birria recipe, all I really had to do was add the ramen!

The most time consuming part of this recipe is preparing the birria. Once you have that made, the rest is easy! Make a big batch of birria and have birria ramen one night and then birria tacos later in the week. If you plan on making both meals, I recommend doubling the sauce in the birria recipe so you have enough broth for each.

To make the birria, you can follow our complete guide on how to make authentic beef birria (also known as birria de res). In this recipe we will walk you through how to make birria, step-by-step. It’s easier than you may think and you will be enjoying it in this ramen recipe before you know it!

  • Chuck Roast – You can also use a rump roast, short ribs, flank steak, stew mean, or even brisket. 
  • Dried Chiles – guajillo chiles, adobo, ancho chiles, and chipotle peppers are popular choices
  • Tomatoes
  • Onions 
  • Beef broth
  • Additional Spices and Seasonings – Seasonings for birria can vary greatly from recipe to recipe. Honestly, use that you like! In this recipe I kept it pretty simple and used garlic, ground cumin, oregano, cinnamon, paprika, and salt and pepper. You can also add a little cider vinegar, thyme, cloves, bay leaves, chili powder, oregano, and/or a whole cinnamon stick.

For the Birria Ramen Bowl

Now that you have the birria made, you just need a few easy ingredients to put it all together! Here’s what you need:

  • Beef birria
  • Excess broth from the birria (aka the birria consommé)
  • Ramen noodles – instant ramen noodles work great, you can go as cheap or expensive as you prefer
  • Chopped white onion
  • Soft boiled eggs
  • Garnishes: Cilantro, sliced jalapeños, lime wedges, radish, salt, pepper

Additions and Variations

With this recipe, the sky is the limit! You can add more of an Asian flair by adding bean sprouts, cabbage, soy sauce, or a little sriracha to kick up the heat. Or you can add more toppings to give it more of a Mexican-style flavor such as hot sauce, sliced radish, cotija cheese, or even tortilla strips.

Serve with Birria Tacos

Once you have the birria made for the birria ramen, it’s so easy to put it in a corn tortilla and make a birria taco or quesabirria. Dip the shell in the broth before adding the birria and cheese. Grill as you would a quesadilla until the cheese is melted and the tortilla becomes lightly crispy. Once you birria taco is made, you can dip in it the ramen broth. It’s the best of ALL worlds! You can have your taco and your ramen too!

Ingredients

  • 1 recipe beef birria (click link)
  • 1 egg
  • 1-2 packages beef ramen noodles
  • 1/4 cup chopped onion
  • 1 tablespoon cilantro
  • 1/2 lime

Instructions

  • Make the beef birria according to recipe.

  • For the soft boiled egg, fill a medium pot with water and heat to a simmer. Place the egg into the water and let simmer for 6 minutes. Remove the egg from the water with a slotted spoon and place in an ice water bath for 3 minutes. Peel and set aside.

  • Separate the beef birria from the birria broth, cover with foil and set aside. Take the broth and bring it to a boil in a medium saucepan. If more broth is needed, add more water and the seasoning packets that came with the ramen if needed for flavor.
    Cook the ramen in the broth over medium-high heat for the amount of time suggested on the package instructions.

  • Place the ramen noodles in a bowl and pour some of the excess over the top.
    Top the ramen with shredded beef birria, soft boiled egg, chopped onion, and cilantro. Garnish with limes.
