This easy Ice Cream Sandwich Cake layers ice cream sandwiches, Cool Whip, fudge, and caramel for a fun, no-bake dessert perfect for summer parties and birthdays!

This Easy Ice Cream Sandwich Cake only takes about fifteen minutes to make and is always a crowd pleaser! It features layers of pre-made ice cream sandwiches, a fluffy layer of Cool Whip, and hot fudge and caramel sauce on top. My kids love making this foolproof cake for family dinners because they can help with every step of the process and are proud of the finished product. It’s the perfect dessert for summer picnics, barbecues, or as a quick and festive birthday cake! Such a fun and EASY dessert!

Ingredients in Ice Cream Sandwich Cake

This cake is so simple and uses just a small handful of ingredients:

  • Ice cream sandwiches – 24 of them for the first layer. You can use regular vanilla ice cream sandwiches or try chocolate, strawberry, or Neapolitan ice cream sandwiches if you’re feeling fancy.
  • Cool-Whip – A 16-ounce tub works great.
  • Hot fudge – One jar of your favorite brand of fudge chocolate sauce. Make sure it’s at room temperature so it’ll drizzle down nicely.
  • Caramel sauce – One jar. It’s optional but adds a delicious layer of flavor to the dessert.
  • Unsalted peanuts – Just a few handfuls.

Tips for Layering and Preparation

  • Start with some good ice cream sandwiches. There are super cheap options out there, but since this is the star of the show, I like to use nice and thick sandwiches. You’ll need about two dozen.
  • If you have time, try to freeze each layer on parchment paper before you stack another layer on top. This helps the whipped topping layers stay firm and keeps them from sliding around as you layer your cake.
  • Microwave your jar of hot fudge sauce for just a few seconds to soften it up a bit, if needed to aid in the drizzling process. But don’t get it too hot; you don’t want to melt the ice cream or whipped cream.
  • This recipe calls for a 9×13 baking dish but you can use any pan you like. You can even do triple-layered cake slices using a loaf pan.
  • This cake can be made a few days in advance and stored in the freezer.

Additions and Variations

Here are a few ideas to elevate your ice cream sandwich cake to the next level:

  • Sprinkle pecans, almonds, Reese’s pieces, M&Ms, crushed Oreos or other chopped candy bars over the top of the cake.
  • Layer in your favorite mix-ins such as M&Ms, chocolate chips, crushed toffee bars, peanut butter cups, sprinkles, butterscotch chips, and just about any candy you like in between layers of ice cream sandwiches and whipped cream.
  • Just about any classic sundae toppings taste delicious here – caramel, butterscotch, hot fudge, mint chocolate, cherry syrup – the sky’s the limit!
  • For a little extra crunch, layer crushed cookies (Oreos, Chips Ahoy, etc.) with the ice cream sandwiches.
  • Drizzle with magic shell topping for a satisfying crackle finish on top.

Ingredients

  • 24 ice cream sandwiches
  • 16 ounces Cool-Whip
  • 1 jar hot fudge
  • 1 jar caramel optional
  • a few handfuls unsalted peanuts

Instructions

  • Unwrap ice cream sandwiches and place one layer of sandwiches on the bottom of a 9×13 glass pan.

  • You may have to cut some of the sandwiches a little bit to get the perfect fit.

  • Drizzle some of the chocolate and caramel over the sandwiches.

  • Next, spread ½ of the whipped cream over the top, then finally sprinkle with nuts.

  • Repeat for the second layer. Chill and serve with extra chocolate, caramel, or nuts! That’s it!

Leftover and Storage Tips:
Tightly cover leftover ice cream sandwich cake with plastic wrap and then aluminum foil (to prevent excess moisture and freezer burn) and store in the freezer for up to two weeks.

  1. This looks SO delicious, and it’s so EASY. Please could someone reply to me and let me know what you think, if I could take off on one cookie side and put them in the oven 375° to crisp them up then put back on the ice cream which has been waiting in the freezer.

    1. Hi David, yes this is SO easy to make. I’m not sure how it will be taking one cookie off and baking it. I am afraid that heating it up will make it soggy or possibly give it a weird texture. If you are set on having a crispy layer, I would almost rather use chocolate graham crackers, then you won’t have to bake anything and you will get the crisp you are looking for. Would that work maybe?
