Even before the days of slow cookers, my grandmother and mother would roast vegetables with a pot roast in the oven. I loved coming in from church on a Sunday to the smell of fragrant meat, carrots, potatoes, or sweet potatoes. Of course, you can still use the oven for this recipe, but it requires the oven to be on for hours and heat up the house. Plus it’s so easy to just toss all the ingredients into the Crockpot and let it slowly cook all day. Dinner is ready with minimal effort and it’s always a crowd-pleaser!

Crockpot Mexican Shredded Beef

This is our go-to shredded beef recipe, I simply love it! It really doesn’t get any easier than throwing a roast in a Crockpot with a handful of ingredients and letting it cook all day. It literally takes 5 minutes of prep time. Growing up, we called this “Mom’s Lake Powell Beef” because she would always make it a few days before we went camping at Lake Powell. She would freeze it and then heat it up over a camp stove. I can’t begin to tell you how good this tasted after a long day of playing on the lake. We served it up in some tortillas for an easy meal. It was delicious!

Zuppa Toscana is one of our favorite soups at Olive Garden, and this copycat recipe is spot on. It is perfect for the cold days of fall and winter, but really it is great any time of the year. The soup is creamy and hearty with a bit of a kick. If you like some heat in your soup, be generous with the red pepper flakes. For a more mild flavor, a little goes a long way. If you like Olive Garden’s Zuppa Toscana soup, you are going to love this (I think it tastes better than Olive Garden’s Zuppa Toscana recipe — it is more creamy and flavorful). How to Make Easy Crockpot Italian Beef

This Italian Beef is slow-cooked in a crockpot until it is full of flavor. Tender beef in savory juices paired with Italian spices make a savory melt-in-your-mouth meal!

Ingredients

  • 1 beef roast 3 to 4 pounds
  • 2 cans beef consomme (10.5 ounces)
  • 16 ounces sliced pepperoncini peppers with juice
  • 1 envelope dry good seasons italian dressing mix
  • 1 teaspoon fresh minced garlic
  • kosher salt to taste

Instructions

  • Place beef roast in a large crockpot, then pour the 2 cans beef consomme over the top.
  • Pour ½ the jar of pepperoncini peppers, including juice, over the top. Then sprinkle the dry Italian dressing mix, minced garlic, and kosher salt over that.
  • Cook for about 5 to 6 hours, roast should easily shred, if not cook a little longer.
  • When the roast is done, shred the beef into the juice and pepperoncini.
  • Serve with rice or potatoes or in our Italian Beef Sandwiches.
